Ingredients
- 1 medium seedless watermelon
- 8 oz feta cheese
- 1 bunch fresh mint
- olive oil
- optional: basil, lemon/lime zest, lime/lemon juice
Method
Prep
- Cut watermelon into ~1 cm cubes
Assemble
- Add watermelon cubes to your serving bowl
- Toss with lemon/lime juice and oil
- Tear mint leaves and sprinkle over the salad
- Crumble feta cheese into salad (make sure to do this at the end)
- Taste and adjust if needed
