Peppermint Patties

Ingredients

Filling

  • 1 cup sweetened condensed milk
  • 112 tsp peppermint extract
  • ~5 cups powdered sugar, plus extra for rolling

Coating

  • 4 cups dark chocolate chips
  • 2 tsp coconut oil

Method

Make the peppermint filling

  • In a medium mixing bowl:
    • Add sweetened condensed milk and peppermint extract
    • Gradually mix in powdered sugar until you have a workable dough
  • On a work surface dusted with powdered sugar:
    • Roll out the dough to desired thickness
    • Cut into circles using a cookie cutter
  • Transfer rounds to a parchment-lined baking sheet
  • Freeze until firm

Melt the chocolate

  • Set up a double boiler:
    • Fill a medium pot with ~an inch of water
    • Place a heatproof bowl on top, ensuring it doesn’t touch the water
  • Add chocolate chips and coconut oil to the bowl
  • Heat gently, stirring until completely melted and smooth

Make the peppermint patties

  • Line another baking sheet with parchment paper
  • Using two forks, dip each frozen peppermint round in the melted chocolate
  • Place coated patties on the prepared baking sheet
  • Refrigerate until chocolate is set
  • Store in freezer or fridge
