Ingredients
Filling
- 1 cup sweetened condensed milk
- 11⁄2 tsp peppermint extract
- ~5 cups powdered sugar, plus extra for rolling
Coating
- 4 cups dark chocolate chips
- 2 tsp coconut oil
Method
Make the peppermint filling
- In a medium mixing bowl:
- Add sweetened condensed milk and peppermint extract
- Gradually mix in powdered sugar until you have a workable dough
- On a work surface dusted with powdered sugar:
- Roll out the dough to desired thickness
- Cut into circles using a cookie cutter
- Transfer rounds to a parchment-lined baking sheet
- Freeze until firm
Melt the chocolate
- Set up a double boiler:
- Fill a medium pot with ~an inch of water
- Place a heatproof bowl on top, ensuring it doesn’t touch the water
- Add chocolate chips and coconut oil to the bowl
- Heat gently, stirring until completely melted and smooth
Make the peppermint patties
- Line another baking sheet with parchment paper
- Using two forks, dip each frozen peppermint round in the melted chocolate
- Place coated patties on the prepared baking sheet
- Refrigerate until chocolate is set
- Store in freezer or fridge
