Ingredients
- 350g bread flour
- 150g ap flour
- 70g sugar
- 6g salt
- 6g yeast
- 2 eggs + oat milk = 285g
- 45g unsalted room temp butter
Method
Make the dough
- Dump all ingredients in a stand mixture bowl
- Using a dough hook, knead until smooth
- Add butter and knead until incorporated
- Form into a tight ball and let rise until doubled in size (~2 hours)
Shape the dough
- Divide into 12 equal parts (74-75g) and preshape into balls
- Let rest for 20 minutes
- Push out the air and form into the final shape
- Looks sorta light a hockey puck
- Let rest covered until doubled in size (1 hour)
- Uncover and let it dry out for 10 minutes
Fry the donuts
- Heat oil to 350F and fry for 2 minutes, smooth side first
- Flip and fry the other side for 2 minutes
- Remove to rack to dry
- Toss in sugar
- Fill with custard cream
