Belgian Waffles

Makes 2 waffles

Ingredients

Dry

  • 90g (34 cup) all-purpose flour
  • 30g (14 cup) cornstarch
  • 1 tsp baking powder
  • 14 tsp kosher salt

Wet

  • 34 cup oat milk
  • 1 large egg
  • 42g (3 tbsp) melted butter or oil
  • 1 tbsp sugar
  • 12 tsp vanilla extract

Method

Make the batter

  • In a medium mixing bowl, whisk together all the dry ingredients
  • In a blender pitcher, blend together all the wet ingredients
  • Transfer the flour mixture into the pitcher and blend until smooth
  • Let the batter rest for ~10 minutes while preheating

Cook waffles

  • Preheat waffle maker
  • Pour half of the batter into the waffle iron, flip and do the other side
  • Cook until golden brown and crispy (usually 4-5 minutes)
  • Serve with butter and syrup

Notes

This recipe makes 2 large Belgian waffles. The cornstarch helps create a crispy exterior while keeping the interior light and fluffy. If the batter seems too thick after resting, you can thin it with a little more oat milk.
