Makes 2 waffles
Ingredients
Dry
- 90g (3⁄4 cup) all-purpose flour
- 30g (1⁄4 cup) cornstarch
- 1 tsp baking powder
- 1⁄4 tsp kosher salt
Wet
- 3⁄4 cup oat milk
- 1 large egg
- 42g (3 tbsp) melted butter or oil
- 1 tbsp sugar
- 1⁄2 tsp vanilla extract
Method
Make the batter
- In a medium mixing bowl, whisk together all the dry ingredients
- In a blender pitcher, blend together all the wet ingredients
- Transfer the flour mixture into the pitcher and blend until smooth
- Let the batter rest for ~10 minutes while preheating
Cook waffles
- Preheat waffle maker
- Pour half of the batter into the waffle iron, flip and do the other side
- Cook until golden brown and crispy (usually 4-5 minutes)
- Serve with butter and syrup
Notes
This recipe makes 2 large Belgian waffles. The cornstarch helps create a crispy exterior while keeping the interior light and fluffy. If the batter seems too thick after resting, you can thin it with a little more oat milk.
