Prep

  • Make the bacon first while doing the following
  • Ready a pot with boiling water and vinegar for the eggs
  • Cut the tomatoes in half and remove the stem part
  • Cut the avocado into thin slices

Cook in parallel

  • Cook the tomatoes in a non-stick skillet over medium heat (15 mins)
  • Make the hollandaise sauce (~10 mins)
  • Separate the english muffins with a fork and toast (~5–6 mins)
  • Poach the eggs (~5 mins)

Assembly

  • Make 2 of these for each person
    • Break a slice of bacon in half and put on an english muffin half
    • Layer on 14 of the sliced avocado
    • Place a poached egg on top
    • Coat with hollandaise
  • Add grilled tomato and cover with any leftover hollandaise
