Donuts

Ingredients

  • 350g bread flour
  • 150g ap flour
  • 70g sugar
  • 6g salt
  • 6g yeast
  • 2 eggs + oat milk = 285g
  • 45g unsalted room temp butter

Method

Make the dough

  • Dump all ingredients in a stand mixture bowl
  • Using a dough hook, knead until smooth
  • Add butter and knead until incorporated
  • Form into a tight ball and let rise until doubled in size (~2 hours)

Shape the dough

  • Divide into 12 equal parts (74-75g) and preshape into balls
  • Let rest for 20 minutes
  • Push out the air and form into the final shape
    • Looks sorta light a hockey puck
  • Let rest covered until doubled in size (1 hour)
  • Uncover and let it dry out for 10 minutes

Fry the donuts

  • Heat oil to 350F and fry for 2 minutes, smooth side first
  • Flip and fry the other side for 2 minutes
  • Remove to rack to dry
  • Toss in sugar
  • Fill with custard cream
